Late Night Chicken Quesadilla

Ingredients:

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 4 pieces Flour tortillas
  • 2 cups Grated cheese (preferably Mexican blend or cheddar)
  • to taste Salsa
  • to taste Guacamole
  • to taste Sour cream

Instructions:

  1. Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat. Add the chicken to the skillet and cook for about 7 minutes on each side or until the chicken is cooked through. Allow the chicken to cool, then chop into small pieces.
  3. Preheat a clean skillet over medium heat.
  4. On a large tortilla, spread an even layer of cheese. Sprinkle the cooked, chopped chicken over half of the tortilla. Fold the tortilla over to cover the chicken.
  5. Cook the quesadilla for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  6. Repeat the process for the remaining quesadillas.
  7. Serve warm with salsa, guacamole and sour cream on the side.
