
Late Night Chicken Quesadilla

Ingredients:
- 2 pieces Chicken breasts
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 0.5 teaspoon Pepper
- 4 pieces Flour tortillas
- 2 cups Grated cheese (preferably Mexican blend or cheddar)
- to taste Salsa
- to taste Guacamole
- to taste Sour cream
Instructions:
- Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.
- Heat the olive oil in a skillet over medium-high heat. Add the chicken to the skillet and cook for about 7 minutes on each side or until the chicken is cooked through. Allow the chicken to cool, then chop into small pieces.
- Preheat a clean skillet over medium heat.
- On a large tortilla, spread an even layer of cheese. Sprinkle the cooked, chopped chicken over half of the tortilla. Fold the tortilla over to cover the chicken.
- Cook the quesadilla for about 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
- Repeat the process for the remaining quesadillas.
- Serve warm with salsa, guacamole and sour cream on the side.
