Kung Pao Octopus

Ingredients:

  • 1.5 pounds Octopus tentacles
  • 0.5 cup Soy sauce
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Sugar
  • 2 tablespoons Peanut oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 8 pieces Dried red chillies
  • 4 stems Scallions, chopped
  • 0.5 cup Unsalted roasted peanuts
  • 1 teaspoon Sichuan peppercorns, ground

Instructions:

  1. Clean and prepare the octopus tentacles.
  2. In a bowl, combine the soy sauce, rice vinegar, and sugar to make the marinade. Add the octopus and let it sit for 15 minutes.
  3. In a pan, heat the peanut oil. Add the garlic, ginger, dried red chillies and stir-fry until fragrant. Add the marinated octopus, reserve the marinade.
  4. Stir-fry the octopus for about 5 minutes. Add the marinade and let it simmer until the sauce has thickened.
  5. Add the scallions, peanuts, and Sichuan peppercorns. Stir for about 2 minutes until everything is well mixed.
  6. Serve the Kung Pao Octopus with jasmine rice. Enjoy your exotic Chinese dinner!
