
Kung Pao Octopus

Ingredients:
- 1.5 pounds Octopus tentacles
- 0.5 cup Soy sauce
- 3 tablespoons Rice vinegar
- 2 tablespoons Sugar
- 2 tablespoons Peanut oil
- 3 cloves Garlic cloves, minced
- 1 tablespoon Ginger, minced
- 8 pieces Dried red chillies
- 4 stems Scallions, chopped
- 0.5 cup Unsalted roasted peanuts
- 1 teaspoon Sichuan peppercorns, ground
Instructions:
- Clean and prepare the octopus tentacles.
- In a bowl, combine the soy sauce, rice vinegar, and sugar to make the marinade. Add the octopus and let it sit for 15 minutes.
- In a pan, heat the peanut oil. Add the garlic, ginger, dried red chillies and stir-fry until fragrant. Add the marinated octopus, reserve the marinade.
- Stir-fry the octopus for about 5 minutes. Add the marinade and let it simmer until the sauce has thickened.
- Add the scallions, peanuts, and Sichuan peppercorns. Stir for about 2 minutes until everything is well mixed.
- Serve the Kung Pao Octopus with jasmine rice. Enjoy your exotic Chinese dinner!
