
Kung Pao Chicken

Ingredients:
- 2 Chicken breast
- 3 tbsp Soy sauce
- 1 tbsp Cornstarch
- 2 tbsp Vegetable oil
- 2 cloves Garlic
- 8 Dried red chilies
- 3 Green onions
- 1 tsp Szechuan Peppercorns
- 1/2 cup Peanuts
- 2 tbsp Rice Vinegar
- 1 tbsp Sugar
- 1/2 cup Water
Instructions:
- Cut the chicken into bite-sized pieces and marinate it in a mixture of the soy sauce and cornstarch.
- Heat the oil in a wok or large pan over high heat. Add the garlic, chilies, and Szechuan peppercorns, frying until fragrant.
- Add the chicken to the pan and stir-fry until it is cooked through. This should take about 5-7 minutes.
- In the meantime, chop the green onions and set aside.
- Mix the vinegar, sugar, and water in a small bowl to create the sauce. When the chicken is cooked, add this sauce to the pan along with the peanuts and stir well to combine everything.
- Add in the green onions and cook for a further 1-2 minutes.
- Serve over rice for a flavorful and satisfying meal.
