Kung Pao Chicken

Ingredients:

  • 2 Chicken breast
  • 3 tbsp Soy sauce
  • 1 tbsp Cornstarch
  • 2 tbsp Vegetable oil
  • 2 cloves Garlic
  • 8 Dried red chilies
  • 3 Green onions
  • 1 tsp Szechuan Peppercorns
  • 1/2 cup Peanuts
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sugar
  • 1/2 cup Water

Instructions:

  1. Cut the chicken into bite-sized pieces and marinate it in a mixture of the soy sauce and cornstarch.
  2. Heat the oil in a wok or large pan over high heat. Add the garlic, chilies, and Szechuan peppercorns, frying until fragrant.
  3. Add the chicken to the pan and stir-fry until it is cooked through. This should take about 5-7 minutes.
  4. In the meantime, chop the green onions and set aside.
  5. Mix the vinegar, sugar, and water in a small bowl to create the sauce. When the chicken is cooked, add this sauce to the pan along with the peanuts and stir well to combine everything.
  6. Add in the green onions and cook for a further 1-2 minutes.
  7. Serve over rice for a flavorful and satisfying meal.
