
Japanese Whole Wheat Soba Noodles

Ingredients:
- 200 grams Whole wheat soba noodles
- 2 stalks Spring onions
- 2 cloves Garlic
- 1 large Carrots
- 100 grams Shiitake mushrooms
- 4 tablespoons Low sodium soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sesame oil
Instructions:
- Bring a large pot of water to boil, cook the soba noodles according to the package instructions, then drain and rinse under cold water.
- Slice the spring onions, finely chop the garlic, peel and julienne the carrot, and slice the shiitake mushrooms.
- In a large pan over medium heat, add the sesame oil. Add the garlic and cook for 1-2 minutes until aromatic.
- Add the spring onions, carrots, and shiitake mushrooms, and stir-fry for about 5-7 minutes until the vegetables are tender.
- In a small bowl, mix together the soy sauce and mirin. Add the sauce to the pan and stir to combine.
- Add the cooked and rinsed soba noodles to the pan, toss until well combined with the vegetables and sauce.
- Serve immediately, garnished with additional sliced spring onions if desired.
