Japanese Whole Wheat Soba Noodles

Ingredients:

  • 200 grams Whole wheat soba noodles
  • 2 stalks Spring onions
  • 2 cloves Garlic
  • 1 large Carrots
  • 100 grams Shiitake mushrooms
  • 4 tablespoons Low sodium soy sauce
  • 2 tablespoons Mirin
  • 1 tablespoon Sesame oil

Instructions:

  1. Bring a large pot of water to boil, cook the soba noodles according to the package instructions, then drain and rinse under cold water.
  2. Slice the spring onions, finely chop the garlic, peel and julienne the carrot, and slice the shiitake mushrooms.
  3. In a large pan over medium heat, add the sesame oil. Add the garlic and cook for 1-2 minutes until aromatic.
  4. Add the spring onions, carrots, and shiitake mushrooms, and stir-fry for about 5-7 minutes until the vegetables are tender.
  5. In a small bowl, mix together the soy sauce and mirin. Add the sauce to the pan and stir to combine.
  6. Add the cooked and rinsed soba noodles to the pan, toss until well combined with the vegetables and sauce.
  7. Serve immediately, garnished with additional sliced spring onions if desired.
