Japanese Vegetable Tempura Breakfast Bowl

Ingredients:

  • 2 cups mixed vegetables (like bell peppers, zucchini, broccoli)
  • 1 packet tempura batter mix
  • as required water
  • 2 tablespoons soy sauce
  • 1 cup white rice
  • for frying vegetable oil
  • 2 stalks green onions

Instructions:

  1. Cook the rice according to package instructions, keep it warm.
  2. In a large bowl, prepare the tempura batter according to the package instructions.
  3. Heat the vegetable oil in a deep frying pan. Dip each vegetable piece into the batter, shake off excess and then fry until golden brown. Remove and drain on paper towels.
  4. Divide the rice between two bowls. Arrange the tempura vegetables on top. Drizzle with soy sauce and garnish with chopped green onions. Serve immediately while the tempura is still crispy.
