
Japanese Vegetable Tempura Breakfast Bowl

Ingredients:
- 2 cups mixed vegetables (like bell peppers, zucchini, broccoli)
- 1 packet tempura batter mix
- as required water
- 2 tablespoons soy sauce
- 1 cup white rice
- for frying vegetable oil
- 2 stalks green onions
Instructions:
- Cook the rice according to package instructions, keep it warm.
- In a large bowl, prepare the tempura batter according to the package instructions.
- Heat the vegetable oil in a deep frying pan. Dip each vegetable piece into the batter, shake off excess and then fry until golden brown. Remove and drain on paper towels.
- Divide the rice between two bowls. Arrange the tempura vegetables on top. Drizzle with soy sauce and garnish with chopped green onions. Serve immediately while the tempura is still crispy.
