
Japanese Vegetable Pancake (Okonomiyaki)

Ingredients:
- 1/2 head Cabbage
- 1 Carrot
- 2 stalks Green onion
- 2 Eggs
- 1 cup All-purpose flour
- 3/4 cup Cold water
- 1/2 tsp Salt
- 2 tablespoons Cooking oil
- 4 tablespoons Okonomiyaki sauce
- 2 tablespoons Japanese mayo
Instructions:
- Chop the cabbage into bite-sized pieces. Grate the carrot and slice the green onions.
- In a large bowl, whip the eggs. Then add the flour, water, and salt to the eggs, stirring until smooth.
- Add the vegetables to the batter and mix until they're coated.
- Heat a large skillet with the oil over medium heat. Once hot, pour the batter into the skillet, spreading it out evenly.
- Cook for about 5 minutes on each side, until golden brown and crispy.
- Serve with a drizzle of okonomiyaki sauce and Japanese mayo.
