Japanese Vegetable Pancake (Okonomiyaki)

Ingredients:

  • 1/2 head Cabbage
  • 1 Carrot
  • 2 stalks Green onion
  • 2 Eggs
  • 1 cup All-purpose flour
  • 3/4 cup Cold water
  • 1/2 tsp Salt
  • 2 tablespoons Cooking oil
  • 4 tablespoons Okonomiyaki sauce
  • 2 tablespoons Japanese mayo

Instructions:

  1. Chop the cabbage into bite-sized pieces. Grate the carrot and slice the green onions.
  2. In a large bowl, whip the eggs. Then add the flour, water, and salt to the eggs, stirring until smooth.
  3. Add the vegetables to the batter and mix until they're coated.
  4. Heat a large skillet with the oil over medium heat. Once hot, pour the batter into the skillet, spreading it out evenly.
  5. Cook for about 5 minutes on each side, until golden brown and crispy.
  6. Serve with a drizzle of okonomiyaki sauce and Japanese mayo.
