Japanese Udon Noodle Stir-Fry

Ingredients:

  • 2 packs Udon noodles
  • 3 tablespoons Soy Sauce
  • 2 tablespoons Mirin
  • 2 teaspoons Sesame oil
  • 2 cloves Garlic, minced
  • 1 medium Green bell pepper, sliced
  • 1 medium Carrot, julienned
  • 1 medium Red bell pepper, sliced
  • 1 cup Snap peas
  • 4 stems Green onions, sliced
  • 1 tablespoon Sesame seeds

Instructions:

  1. Boil the udon noodles according to the packet instructions. Once cooked, rinse under cold water and set aside.
  2. Heat the sesame oil in a large frying pan or wok over medium heat.
  3. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  4. Add the sliced bell peppers, carrot, snap peas, and green onions to the pan. Stir fry for 5-7 minutes, or until the vegetables are tender.
  5. Add the cooked udon noodles to the pan along with the soy sauce and mirin. Stir fry for another 2-3 minutes, until the noodles are heated through and have absorbed the flavors of the sauce.
  6. Serve the noodle stir-fry hot, garnished with sesame seeds.
