
Japanese Udon Noodle Stir-Fry

Ingredients:
- 2 packs Udon noodles
- 3 tablespoons Soy Sauce
- 2 tablespoons Mirin
- 2 teaspoons Sesame oil
- 2 cloves Garlic, minced
- 1 medium Green bell pepper, sliced
- 1 medium Carrot, julienned
- 1 medium Red bell pepper, sliced
- 1 cup Snap peas
- 4 stems Green onions, sliced
- 1 tablespoon Sesame seeds
Instructions:
- Boil the udon noodles according to the packet instructions. Once cooked, rinse under cold water and set aside.
- Heat the sesame oil in a large frying pan or wok over medium heat.
- Add the minced garlic and stir-fry for 30 seconds until fragrant.
- Add the sliced bell peppers, carrot, snap peas, and green onions to the pan. Stir fry for 5-7 minutes, or until the vegetables are tender.
- Add the cooked udon noodles to the pan along with the soy sauce and mirin. Stir fry for another 2-3 minutes, until the noodles are heated through and have absorbed the flavors of the sauce.
- Serve the noodle stir-fry hot, garnished with sesame seeds.
