Japanese-style Healthy Pasta Salad

Ingredients:

  • 200 grams Whole grain pasta
  • 2 tablespoons Tamari soy sauce
  • 1 tablespoon Sesame oil
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 piece Cucumber
  • 1 piece Red bell pepper
  • 1 piece Carrot
  • 2 stalks Green onion
  • 1 tablespoon Sesame seeds

Instructions:

  1. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and rinse under cold water.
  2. While the pasta is cooking, make the dressing. In a small bowl, whisk together the tamari soy sauce, sesame oil, rice vinegar, and honey.
  3. Slice the cucumber, bell pepper, carrot, and green onion into thin matchsticks.
  4. Once the pasta is cooled, add the chopped vegetables and pour over the dressing. Toss until well combined.
  5. Sprinkle with sesame seeds and serve. Enjoy it as a snack or as a light main course.
