
Japanese-Style Healthy Pasta

Ingredients:
- 200 grams Whole wheat spaghetti
- 200 grams Shiitake mushrooms
- 1 cup Edamame beans
- 2 cloves Garlic
- 3 tablespoons Low-sodium soy sauce
- 2 tablespoons Olive oil
- 1 tablespoon Sesame seeds
- 2 stalks Scallions
- 1 tablespoon, grated Ginger
Instructions:
- Boil water in a large pot, add a pinch of salt to it. Once the water is boiling, add the pasta to it and let it cook as per the instructions on the package.
- While the pasta is cooking, start working on the sauce. Heat oil in a pan, add minced garlic and grated ginger to it. Saute till the raw smell fades away.
- Add sliced shiitake mushrooms to the pan and cook for about five minutes or until the mushrooms soften.
- Then, add in the edamame beans and saute for another two minutes.
- Mix in the low-sodium soy sauce and cook for another minute.
- Once the pasta is done, drain it but keep 1 cup of the pasta water. Mix the drained pasta into the sauce, adding pasta water as needed to loosen up the sauce.
- Garnish with a sprinkle of sesame seeds and chopped scallions before serving.
