Japanese-Style Healthy Pasta

Ingredients:

  • 200 grams Whole wheat spaghetti
  • 200 grams Shiitake mushrooms
  • 1 cup Edamame beans
  • 2 cloves Garlic
  • 3 tablespoons Low-sodium soy sauce
  • 2 tablespoons Olive oil
  • 1 tablespoon Sesame seeds
  • 2 stalks Scallions
  • 1 tablespoon, grated Ginger

Instructions:

  1. Boil water in a large pot, add a pinch of salt to it. Once the water is boiling, add the pasta to it and let it cook as per the instructions on the package.
  2. While the pasta is cooking, start working on the sauce. Heat oil in a pan, add minced garlic and grated ginger to it. Saute till the raw smell fades away.
  3. Add sliced shiitake mushrooms to the pan and cook for about five minutes or until the mushrooms soften.
  4. Then, add in the edamame beans and saute for another two minutes.
  5. Mix in the low-sodium soy sauce and cook for another minute.
  6. Once the pasta is done, drain it but keep 1 cup of the pasta water. Mix the drained pasta into the sauce, adding pasta water as needed to loosen up the sauce.
  7. Garnish with a sprinkle of sesame seeds and chopped scallions before serving.
