Japanese Style Comfort Rice Bowl

Ingredients:

  • 2 cups Jasmine rice
  • 2 cups Water
  • 3 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Minced garlic
  • 500 grams Chicken breast slices
  • As needed Vegetables (broccoli, bell pepper, carrots)
  • 1 large Onion, thinly sliced
  • 4 large Eggs

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. Put the rice in a rice cooker with 2 cups of water and let it cook.
  2. In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sliced onion, stirring until they become fragrant.
  3. Add the sliced chicken breast to the skillet and cook until it's no longer pink in the middle.
  4. Add your chosen vegetables to the skillet and stir fry until they are tender.
  5. In a small bowl, mix together the soy sauce and a pinch of sugar, then pour this sauce over the chicken and vegetables in the skillet.
  6. Once the rice is cooked, divide it among four bowls.
  7. Top each bowl of rice with an equal amount of the chicken and vegetable mixture.
  8. In the same skillet, cook 4 eggs over easy or to your liking. Place an egg on top of each rice bowl.
  9. Serve the rice bowls hot, sprinkled with a bit of sesame seeds and chopped scallions if desired.
