
Japanese Style Comfort Rice Bowl

Ingredients:
- 2 cups Jasmine rice
- 2 cups Water
- 3 tablespoons Soy sauce
- 1 tablespoon Sesame oil
- 2 cloves Minced garlic
- 500 grams Chicken breast slices
- As needed Vegetables (broccoli, bell pepper, carrots)
- 1 large Onion, thinly sliced
- 4 large Eggs
Instructions:
- Rinse the jasmine rice under cold water until the water runs clear. Put the rice in a rice cooker with 2 cups of water and let it cook.
- In a large skillet, heat the sesame oil over medium heat. Add the minced garlic and sliced onion, stirring until they become fragrant.
- Add the sliced chicken breast to the skillet and cook until it's no longer pink in the middle.
- Add your chosen vegetables to the skillet and stir fry until they are tender.
- In a small bowl, mix together the soy sauce and a pinch of sugar, then pour this sauce over the chicken and vegetables in the skillet.
- Once the rice is cooked, divide it among four bowls.
- Top each bowl of rice with an equal amount of the chicken and vegetable mixture.
- In the same skillet, cook 4 eggs over easy or to your liking. Place an egg on top of each rice bowl.
- Serve the rice bowls hot, sprinkled with a bit of sesame seeds and chopped scallions if desired.
