- 1 inch piece fresh ginger
- 6 cups dashi stock
- 4 servings ramen noodles
- 1 pound medium shrimp
- 4 stalks scallions

- While the broth is simmering, prepare your ramen noodles according to the package instructions. Once cooked, drain them and set them aside.
- In a separate pan, sauté your shrimp until they are pink and cooked through. Set these aside as well.
- Slice your scallions and set them aside. Prepare your nori sheets by cutting them into quarters and set these aside as well.
- Assemble your bowls by adding a serving of noodles to each. Pour over the hot broth, then top with the cooked shrimp, sliced scallions, a piece of nori, a soft boiled egg cut in half.
- The ramen is ready to eat. Enjoy this comforting, flavourful dish!
