Japanese Sea Urchin Omelette

Ingredients:

  • 200 grams Sea urchin roe
  • 4 unit Fresh eggs
  • 2 unit Spring onions
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 pinch Salt
  • 1 pinch Pepper
  • 2 tablespoons Olive oil

Instructions:

  1. Start by cleaning the sea urchin roe gently under cold water. Place on a paper towel and set aside.
  2. Crack the eggs in a bowl, add the soy sauce, mirin, salt, and pepper. Whisk until well combined.
  3. Finely slice the spring onions.
  4. Heat a pan over medium-high heat and add one tablespoon of olive oil. Once hot, pour in half the egg mixture and tilt the pan to spread evenly. Let cook for a minute until the edges start to set.
  5. Place half the sea urchin roe and spring onions on one side of the omelette. Gently fold the other half over. Cook for another minute, then slide the omelette onto a plate.
  6. Repeat for the second omelette.
  7. Serve the sea urchin omelette hot. Enjoy this exotic Japanese breakfast dish!
