
Japanese Sea Urchin Omelette

Ingredients:
- 200 grams Sea urchin roe
- 4 unit Fresh eggs
- 2 unit Spring onions
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 1 pinch Salt
- 1 pinch Pepper
- 2 tablespoons Olive oil
Instructions:
- Start by cleaning the sea urchin roe gently under cold water. Place on a paper towel and set aside.
- Crack the eggs in a bowl, add the soy sauce, mirin, salt, and pepper. Whisk until well combined.
- Finely slice the spring onions.
- Heat a pan over medium-high heat and add one tablespoon of olive oil. Once hot, pour in half the egg mixture and tilt the pan to spread evenly. Let cook for a minute until the edges start to set.
- Place half the sea urchin roe and spring onions on one side of the omelette. Gently fold the other half over. Cook for another minute, then slide the omelette onto a plate.
- Repeat for the second omelette.
- Serve the sea urchin omelette hot. Enjoy this exotic Japanese breakfast dish!
