Japanese Pork Rice Bowl

Ingredients:

  • 1 cup Short grain rice
  • 2 cups Water
  • 2 Boneless pork chops
  • 1 medium Onion
  • 4 Eggs
  • 4 tablespoons Soy Sauce
  • 2 tablespoons Mirin
  • 2 teaspoons Sugar
  • 2 stalks Green onions

Instructions:

  1. Cook the rice according to package instructions.
  2. Meanwhile, thinly slice the onion and cut the pork chops into thin strips.
  3. In a medium-sized pan over medium heat, cook the pork strips until no longer pink, then remove and set aside.
  4. In the same pan, add the sliced onions and sauté until they become soft and caramelized.
  5. In a small bowl, mix the soy sauce, mirin, and sugar. Pour this sauce into the pan with the onions and let it simmer for a couple minutes.
  6. Add the cooked pork back into the pan and mix everything well to ensure the pork is coated with the sauce.
  7. Crack the eggs into the pan and scramble them with the pork and onions.
  8. Divide the cooked rice between two bowls. Top each bowl with half of the pork and egg mixture, then garnish with sliced green onions.
