
Japanese Pork Rice Bowl

Ingredients:
- 1 cup Short grain rice
- 2 cups Water
- 2 Boneless pork chops
- 1 medium Onion
- 4 Eggs
- 4 tablespoons Soy Sauce
- 2 tablespoons Mirin
- 2 teaspoons Sugar
- 2 stalks Green onions
Instructions:
- Cook the rice according to package instructions.
- Meanwhile, thinly slice the onion and cut the pork chops into thin strips.
- In a medium-sized pan over medium heat, cook the pork strips until no longer pink, then remove and set aside.
- In the same pan, add the sliced onions and sauté until they become soft and caramelized.
- In a small bowl, mix the soy sauce, mirin, and sugar. Pour this sauce into the pan with the onions and let it simmer for a couple minutes.
- Add the cooked pork back into the pan and mix everything well to ensure the pork is coated with the sauce.
- Crack the eggs into the pan and scramble them with the pork and onions.
- Divide the cooked rice between two bowls. Top each bowl with half of the pork and egg mixture, then garnish with sliced green onions.
