Japanese Omurice for Midnight Cravings

Ingredients:

  • 4 count Eggs
  • 2 cups Cooked rice
  • 200 grams Chicken breast
  • 1 count Onion, finely chopped
  • 0.5 cup Green peas, frozen
  • 1 tablespoon Soy sauce
  • 3 tablespoon Ketchup
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Butter
  • 2 tablespoon Vegetable oil

Instructions:

  1. Heat 1 tablespoon of oil in a pan over medium heat and cook the chicken until no longer pink.
  2. Add the onions to the pan and cook until they become transparent. Add the peas and cook for another 2-3 minutes.
  3. Stir in the cooked rice, and season with salt, pepper, soy sauce, and 2 tablespoons of ketchup. Mix well and set aside.
  4. In a new pan, beat 2 eggs and pour it into the hot pan with butter. Let it cook for 1-2 minutes without stirring, until the edges start to set but the middle is still runny.
  5. Place half the rice mixture in the middle of the egg. Gently fold the egg over the rice from all sides to form an omelette.
  6. Slide the omurice onto a plate, and top with the remaining ketchup. Repeat the process with the remaining eggs and rice.
  7. If desired, garnish with parsley before serving.
