Japanese Grilled Mackerel (Saba Shioyaki)

Ingredients:

  • 2 pieces mackerel fillets
  • 2 teaspoons kosher salt
  • 1 whole lemon
  • 1/4 whole daikon radish
  • 2 tablespoons soy sauce

Instructions:

  1. 1. Rinse the mackerel fillets and pat dry with paper towels.
  2. 2. Sprinkle both sides of the mackerel with kosher salt and let sit for 5 minutes.
  3. 3. Preheat the oven's broiler and position a rack 5-6 inches away from the heating element.
  4. 4. Arrange the mackerel on a baking sheet lined with foil. Broil for 5-6 minutes on each side, or until the skin is crisp and the fish is cooked through.
  5. 5. While the fish is cooking, grate the daikon radish and squeeze the juice from the lemon to prepare your accompaniments.
  6. 6. Serve the mackerel hot from the oven with a squeeze of fresh lemon juice, a pile of grated daikon, and a small dish of soy sauce for dipping.
