Japanese Fruit Sushi

Ingredients:

  • 1 cup Sushi Rice
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sugar
  • 5 sheets Noris (seaweed sheets)
  • 10 Strawberries
  • 2 Kiwis
  • 1 Mango
  • 100 grams Cream Cheese

Instructions:

  1. Start by rinsing the sushi rice under cold water until the water runs clear. Then, cook it according to the instructions on the packet. Typically, this would involve adding the rice to a pot with 1 1/2 cups of water, bringing it to a boil, then reducing the heat and letting it simmer for 15-20 minutes.
  2. Once the rice is cooked, stir in the rice vinegar and sugar while it's still warm. Let it cool.
  3. Meanwhile, slice your fruits into long thin pieces. You want them to be about the same size as a typical sushi filling.
  4. Lay a sheet of Nori onto your sushi rolling mat. Spread a thin layer of sushi rice over the seaweed, leaving about 1cm clear at the top of the sheet.
  5. Place a thin layer of cream cheese on top of the rice, then arrange your fruit slices on top of this.
  6. Roll your sushi using the mat, applying a gentle pressure to keep everything compact.
  7. Use a sharp knife to slice your sushi roll into bite-sized pieces. You may find it helpful to wet the knife slightly to prevent sticking.
  8. Repeat these steps with the rest of your ingredients.
  9. Serve your fruit sushi with a small dish of sweet chili sauce or chocolate syrup for dipping.
