Japanese Fruit Salad with Ginger Dressing

Ingredients:

  • 4 cups mixed fruits(such as berries, kiwi, mango, pear, and plums)
  • 2 cups leafy greens (such as spinach or arugula)
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons raw honey
  • 1 tablespoon fresh ginger root, peeled and grated
  • 1 tablespoon sesame seeds

Instructions:

  1. Prepare all your fruit by washing and cutting into bite-sized pieces.
  2. In a large bowl, toss together your mixed fruits and leafy greens.
  3. In a smaller bowl, mix together the lemon juice, honey, and grated ginger until well combined. This will be your dressing.
  4. Pour the dressing over your fruit and leafy greens mixture and gently toss to combine. Ensure all pieces are coated well with the dressing.
  5. Divide the salad into four portions. Sprinkle each with sesame seeds before serving. Enjoy it fresh.
