Japanese Fruit Rice Porridge (Okayu)

Ingredients:

  • 1 cup Short grain rice
  • 5 cups Water
  • 1.5 cups Mixed fruits (Mango, Berries, Banana, etc.)
  • 2 tablespoons Honey
  • 2 pieces Japanese pickled plum (Umeboshi)

Instructions:

  1. Rinse the rice under cold water until the water runs clear. This removes excess starch and helps to get the right consistency for the porridge.
  2. Place the rinsed rice and water in a large saucepan over medium heat. Bring it to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 20 minutes, or until the rice is soft and the water is absorbed.
  3. While the rice is cooking, prepare your fruits by washing and cutting them into bite-sized pieces.
  4. Once the porridge is done, stir in the honey. Then, add in your mixed fruits and stir gently. Cook for another 2-3 minutes until everything is well combined.
  5. Serve the porridge in bowls, and top with a pickled plum for a unique Japanese twist. This comforting breakfast dish is now ready to be enjoyed.
