
Japanese Fruit Rice Porridge (Okayu)

Ingredients:
- 1 cup Short grain rice
- 5 cups Water
- 1.5 cups Mixed fruits (Mango, Berries, Banana, etc.)
- 2 tablespoons Honey
- 2 pieces Japanese pickled plum (Umeboshi)
Instructions:
- Rinse the rice under cold water until the water runs clear. This removes excess starch and helps to get the right consistency for the porridge.
- Place the rinsed rice and water in a large saucepan over medium heat. Bring it to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 20 minutes, or until the rice is soft and the water is absorbed.
- While the rice is cooking, prepare your fruits by washing and cutting them into bite-sized pieces.
- Once the porridge is done, stir in the honey. Then, add in your mixed fruits and stir gently. Cook for another 2-3 minutes until everything is well combined.
- Serve the porridge in bowls, and top with a pickled plum for a unique Japanese twist. This comforting breakfast dish is now ready to be enjoyed.
