Japanese Fruit Curry Rice

Ingredients:

  • 1 whole Apple
  • 1 whole Pear
  • 1 whole Onion
  • 1 whole Carrot
  • 100 grams Japanese Curry Roux
  • 2 cups Rice
  • 2 tablespoons Oil
  • 4 cups Water
  • 1 teaspoon Salt

Instructions:

  1. Peel and dice the apple and pear, make sure to remove the seeds.
  2. Slice the onion and carrot.
  3. In a large pan, heat oil and add onions until translucent.
  4. Add the diced fruits and carrots. Cook until they are slightly softened.
  5. Add curry roux and water into the pan. Stir until the curry roux is completely dissolved. Continue to stir occasionally until the curry comes to a boil.
  6. Once the curry has come to a boil, reduce heat to low and let it simmer for about 10 minutes.
  7. While the curry is simmering, cook your rice according to the instructions on the package.
  8. Season the curry with salt, or to taste.
  9. Divide the cooked rice among four plates, pour some curry over top. Serve while hot.
