
Japanese Egg and Vegetable Stir Fry

Ingredients:
- 4 whole Eggs
- 1 large Bell pepper
- 1 large Carrot
- 2 cloves Garlic
- 1 inch piece Fresh ginger
- 2 tablespoons Soy sauce
- 1 tablespoon Vegetable oil
Instructions:
- Start by prepping your vegetables. Thinly slice the bell pepper and carrot. Finely chop the garlic and ginger.
- Crack the eggs into a bowl and whisk them together until fully combined.
- Heat the vegetable oil in a large frying pan over medium heat.
- Once hot, add the garlic and ginger to the pan. Cook for 1-2 minutes until fragrant.
- Add the sliced vegetables to the pan and stir-fry for about 5 minutes until they start to soften.
- Push the vegetables to the side of the pan and add the whisked eggs. Let them cook for a minute or so until they start to set, then stir everything together.
- Drizzle the soy sauce over everything and give it a good stir.
- Serve right away with a side of sushi rice or enjoy as is. Enjoy your healthy and delicious Japanese lunch!
