Japanese Egg and Vegetable Stir Fry

Ingredients:

  • 4 whole Eggs
  • 1 large Bell pepper
  • 1 large Carrot
  • 2 cloves Garlic
  • 1 inch piece Fresh ginger
  • 2 tablespoons Soy sauce
  • 1 tablespoon Vegetable oil

Instructions:

  1. Start by prepping your vegetables. Thinly slice the bell pepper and carrot. Finely chop the garlic and ginger.
  2. Crack the eggs into a bowl and whisk them together until fully combined.
  3. Heat the vegetable oil in a large frying pan over medium heat.
  4. Once hot, add the garlic and ginger to the pan. Cook for 1-2 minutes until fragrant.
  5. Add the sliced vegetables to the pan and stir-fry for about 5 minutes until they start to soften.
  6. Push the vegetables to the side of the pan and add the whisked eggs. Let them cook for a minute or so until they start to set, then stir everything together.
  7. Drizzle the soy sauce over everything and give it a good stir.
  8. Serve right away with a side of sushi rice or enjoy as is. Enjoy your healthy and delicious Japanese lunch!
