
Japanese Comfort Rice Bowl - Donburi

Ingredients:
- 2 cups Short grain rice
- 3 cups Water
- 4 Chicken thighs
- 0.5 cup Soy Sauce
- 0.25 cup Mirin
- 2 tablespoons Sugar
- 4 Green onions
- 4 Eggs
Instructions:
- Rinse the rice under cold water until the water runs clear. Add to a pot with the water and let it soak for 15 minutes.
- Bring the water and rice to a boil. Once boiling reduce the heat, cover, and let simmer for 15 minutes. After that, remove from the heat and let steam for another 10 minutes.
- Meanwhile, cut the chicken thighs into bite size pieces and chop the green onions.
- In a pan over medium heat, add the chicken and cook until browned on all sides. Add the soy sauce, mirin, and sugar to the pan. Stir to coat the chicken and continue to cook until the chicken is fully cooked and the sauce is reduced.
- In a separate pan, fry the eggs to your preferred level of doneness.
- To serve, divide the rice between the bowls. Top each with the chicken and sauce, a fried egg, and a sprinkling of the green onions.
