
Japanese Comfort Ramen

Ingredients:
- 8 cups chicken stock
- 1/4 cup soy sauce
- 2 tablespoons rice wine vinegar
- 4 packets ramen noodles
- 4 pieces eggs
- 2 pieces spring onions
- 1 can bamboo shoots
- 4 sheets norwegian seaweed
Instructions:
- In a large pot, bring the chicken stock, soy sauce and rice wine vinegar to a boil.
- Add the ramen noodles and cook according to package instructions - usually about 3-5 minutes.
- In the meantime, hard-boil the eggs, then peel and slice them in half.
- Slice the spring onions and set aside.
- Once the noodles are cooked, divide them into four bowls. Pour over the ramen broth.
- Top each bowl with the slices of hard-boiled eggs, bamboo shoots, spring onions, and seaweed.
- Serve the ramen hot and enjoy this comforting Japanese classic at dinner.
