Japanese Comfort Ramen

Ingredients:

  • 8 cups chicken stock
  • 1/4 cup soy sauce
  • 2 tablespoons rice wine vinegar
  • 4 packets ramen noodles
  • 4 pieces eggs
  • 2 pieces spring onions
  • 1 can bamboo shoots
  • 4 sheets norwegian seaweed

Instructions:

  1. In a large pot, bring the chicken stock, soy sauce and rice wine vinegar to a boil.
  2. Add the ramen noodles and cook according to package instructions - usually about 3-5 minutes.
  3. In the meantime, hard-boil the eggs, then peel and slice them in half.
  4. Slice the spring onions and set aside.
  5. Once the noodles are cooked, divide them into four bowls. Pour over the ramen broth.
  6. Top each bowl with the slices of hard-boiled eggs, bamboo shoots, spring onions, and seaweed.
  7. Serve the ramen hot and enjoy this comforting Japanese classic at dinner.
