Japanese Comfort Egg Rice Bowl

Ingredients:

  • 2 cup Jasmine rice
  • 2 cup Water
  • 8 unit Eggs
  • 0.25 cup Soy sauce
  • 4 unit Green onions
  • 1 tablespoon Sesame oil
  • 1 tablespoon Sesame seeds

Instructions:

  1. In a large pot, bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 15 minutes.
  2. While the rice is cooking, crack the eggs into a bowl. Beat them lightly with a fork.
  3. Heat sesame oil in a non-stick pan over medium heat. Add beaten eggs and scramble until just set, but still slightly runny in places, about 3 minutes.
  4. Fluff the cooked rice with a fork and divide among four bowls. Top each bowl with scrambled eggs.
  5. Drizzle each bowl of rice and eggs with soy sauce, to taste. Sprinkle with chopped green onions and sesame seeds.
  6. To serve, mix the eggs and rice together. Add more soy sauce, if desired.
