
Japanese Comfort Egg Donburi (Oyakodon)

Ingredients:
- 4 pieces Chicken thighs
- 4 large Eggs
- 2 cups Rice
- 1 large Onion
- 3 tablespoons Soy sauce
- 3 tablespoons Mirin
- 1 teaspoon Sugar
- 2 cups Dashi stock
- 2 stalks Green onions
- 1 packet Nori seaweed
Instructions:
- Start by cooking the rice following the instructions on its packaging.
- While the rice is cooking, cut the chicken into bite-sized pieces and thinly slice the onion.
- In a large, flat pan, simmer the onion, soy sauce, mirin, sugar, and dashi stock over a medium heat until the onions are tender.
- Add the chicken to the pan and cook until no longer pink.
- In a bowl, lightly beat the eggs and gently pour over the chicken and onion mixture.
- Cover the pan with a lid and let it simmer over low heat until the egg is just cooked through (about 3-5 minutes).
- Once the egg is cooked, serve the mixture over the cooked rice.
- Garnish with sliced green onions and nori seaweed.
