Japanese Comfort Egg Donburi (Oyakodon)

Ingredients:

  • 4 pieces Chicken thighs
  • 4 large Eggs
  • 2 cups Rice
  • 1 large Onion
  • 3 tablespoons Soy sauce
  • 3 tablespoons Mirin
  • 1 teaspoon Sugar
  • 2 cups Dashi stock
  • 2 stalks Green onions
  • 1 packet Nori seaweed

Instructions:

  1. Start by cooking the rice following the instructions on its packaging.
  2. While the rice is cooking, cut the chicken into bite-sized pieces and thinly slice the onion.
  3. In a large, flat pan, simmer the onion, soy sauce, mirin, sugar, and dashi stock over a medium heat until the onions are tender.
  4. Add the chicken to the pan and cook until no longer pink.
  5. In a bowl, lightly beat the eggs and gently pour over the chicken and onion mixture.
  6. Cover the pan with a lid and let it simmer over low heat until the egg is just cooked through (about 3-5 minutes).
  7. Once the egg is cooked, serve the mixture over the cooked rice.
  8. Garnish with sliced green onions and nori seaweed.
