Japanese Comfort Chicken Donburi

Ingredients:

  • 1 pound boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 1/4 cup sake
  • 1 tablespoon sugar
  • 2 cups rice
  • 3 green onions
  • 4 eggs

Instructions:

  1. 1. Cut the chicken thighs into bite-sized pieces.
  2. 2. Combine the soy sauce, mirin, sake, and sugar in a bowl. Add the chicken and marinate for at least 10 minutes.
  3. 3. Cook the rice according to package instructions.
  4. 4. In a large skillet over medium heat, cook the chicken and marinade until the chicken is cooked through and the sauce has thickened, about 10 minutes.
  5. 5. Meanwhile, slice the green onions and beat the eggs in a bowl.
  6. 6. Push the chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs lightly until just set.
