
Japanese Comfort Chicken Donburi

Ingredients:
- 1 pound boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/4 cup sake
- 1 tablespoon sugar
- 2 cups rice
- 3 green onions
- 4 eggs
Instructions:
- 1. Cut the chicken thighs into bite-sized pieces.
- 2. Combine the soy sauce, mirin, sake, and sugar in a bowl. Add the chicken and marinate for at least 10 minutes.
- 3. Cook the rice according to package instructions.
- 4. In a large skillet over medium heat, cook the chicken and marinade until the chicken is cooked through and the sauce has thickened, about 10 minutes.
- 5. Meanwhile, slice the green onions and beat the eggs in a bowl.
- 6. Push the chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs lightly until just set.
- 7. To serve, spoon a bed of rice into a bowl. Top with the chicken and eggs, and garnish with the green onions. Enjoy this comforting Japanese chicken donburi!
