Japanese Comfort Breakfast Rice Bowl with Fish

Ingredients:

  • 1 cup White Rice, uncooked
  • 1.5 cups Water
  • 2 pieces Fish fillets (such as salmon or mackerel)
  • 2 tablespoons Soy Sauce
  • 1 tablespoon White Sugar
  • 1 tablespoon Vegetable oil
  • 2 stalks Spring onions
  • 1 teaspoon Ginger, freshly grated
  • 1 sheet Nori (Dried seaweed)

Instructions:

  1. Wash the rice until the water runs clear. Add the washed rice and water to a pot, cover, and bring to a boil. Reduce the heat to low and simmer for 20 minutes, or until the rice is cooked through and the water is absorbed.
  2. While the rice is cooking, marinate the fish fillets with soy sauce, sugar, and grated ginger for 10 minutes.
  3. Heat vegetable oil in a pan over medium heat. Place the fish fillets in the pan and cook for around 5-6 minutes on each side or until the fish is cooked through and lightly browned.
  4. Slice the spring onions into thin rings. Tear the nori into small pieces.
  5. When the rice is done, fluff it lightly with a fork. Serve the cooked fish on top of the rice, garnish with the sliced spring onions and pieces of nori.
