
Japanese Comfort Breakfast Rice Bowl

Ingredients:
- 1 cup Japanese short grain rice
- 2 cups Water
- 100 grams Cooked Salmon flakes
- 2 sticks Spring Onions
- to taste Soy Sauce
- to taste Furikake (Japanese rice seasoning)
- 1 piece Pickled plum (Umeboshi)
- 2 large Eggs
Instructions:
- Firstly, rinse the rice under cold water until the water is clear. This removes excess starch to make the rice fluffy.
- Put the rinsed rice and the measured water into a medium saucepan. Bring it to a boil over medium high heat. Once boiling, reduce the heat to low, and let it simmer for about 15 minutes, or until all the water has been absorbed.
- While the rice is cooking, chop the spring onions and set aside for garnishing. Cook the eggs in your preferred style; you can either fry them with a runny yolk, or make a soft boiled egg.
- Flake the cooked salmon, removing any bones if necessary. This will be served on top of the cooked rice.
- Once the rice is cooked, divide it into two bowl. Top with the salmon flakes, spring onions, the egg, and a pickled plum each. Sprinkle some soy sauce to taste, as well as a bit of Furikake for extra flavour.
- Serve this comforting Japanese rice bowl hot, perfect for a hearty breakfast. Enjoy!
