Japanese Comfort Breakfast Rice Bowl

Ingredients:

  • 1 cup Japanese short grain rice
  • 2 cups Water
  • 100 grams Cooked Salmon flakes
  • 2 sticks Spring Onions
  • to taste Soy Sauce
  • to taste Furikake (Japanese rice seasoning)
  • 1 piece Pickled plum (Umeboshi)
  • 2 large Eggs

Instructions:

  1. Firstly, rinse the rice under cold water until the water is clear. This removes excess starch to make the rice fluffy.
  2. Put the rinsed rice and the measured water into a medium saucepan. Bring it to a boil over medium high heat. Once boiling, reduce the heat to low, and let it simmer for about 15 minutes, or until all the water has been absorbed.
  3. While the rice is cooking, chop the spring onions and set aside for garnishing. Cook the eggs in your preferred style; you can either fry them with a runny yolk, or make a soft boiled egg.
  4. Flake the cooked salmon, removing any bones if necessary. This will be served on top of the cooked rice.
  5. Once the rice is cooked, divide it into two bowl. Top with the salmon flakes, spring onions, the egg, and a pickled plum each. Sprinkle some soy sauce to taste, as well as a bit of Furikake for extra flavour.
  6. Serve this comforting Japanese rice bowl hot, perfect for a hearty breakfast. Enjoy!
