
Japanese Chicken Yakitori

Ingredients:
- 500 grams Boneless chicken thighs
- 4 tablespoons Soy sauce
- 2 tablespoons Mirin
- 1 tablespoon Sugar
- 1 bunch Scallions
- 8 pieces Bamboo skewers
Instructions:
- Soak the bamboo skewers in water for at least 30 minutes to prevent them from burning.
- Cut the chicken thighs into bite-sized pieces.
- Thread the chicken pieces onto the bamboo skewers, alternating with pieces of scallion.
- In a small saucepan, combine the soy sauce, mirin, and sugar. Bring to a boil and then reduce to a simmer until the sauce thickens.
- Preheat a grill or broiler. Grill the skewers, turning frequently and basting with the sauce, until the chicken is cooked through and slightly charred, about 10 minutes.
- Serve the yakitori with the remaining sauce on the side for dipping.
