Japanese Breakfast Tofu Stir Fry

Ingredients:

  • 1 block Firm tofu
  • 2 tablespoons Soy sauce
  • 1 tablespoon Mirin
  • 1 teaspoon Brown sugar
  • 2 cups Fresh vegetables (like carrots, bell pepper, spring onions)
  • 2 cups Cooked rice
  • 1 tablespoon Vegetable oil
  • 1 teaspoon Sesame seeds

Instructions:

  1. Press the tofu to remove excess water and then cut into cubes.
  2. Heat the oil in a large pan over medium heat, add the tofu and cook until brown on all sides, about 10 minutes.
  3. While tofu is cooking, mix the soy sauce, mirin, and brown sugar in a small bowl.
  4. Once tofu is browned, add the fresh vegetables to the pan and sauté until just starting to soften, about 5 minutes.
  5. Pour the soy sauce mixture into the pan and stir until tofu and vegetables are thoroughly coated.
  6. Serve the tofu stir fry over cooked rice, sprinkled with sesame seeds.
