
Japanese Breakfast Tofu Stir Fry

Ingredients:
- 1 block Firm tofu
- 2 tablespoons Soy sauce
- 1 tablespoon Mirin
- 1 teaspoon Brown sugar
- 2 cups Fresh vegetables (like carrots, bell pepper, spring onions)
- 2 cups Cooked rice
- 1 tablespoon Vegetable oil
- 1 teaspoon Sesame seeds
Instructions:
- Press the tofu to remove excess water and then cut into cubes.
- Heat the oil in a large pan over medium heat, add the tofu and cook until brown on all sides, about 10 minutes.
- While tofu is cooking, mix the soy sauce, mirin, and brown sugar in a small bowl.
- Once tofu is browned, add the fresh vegetables to the pan and sauté until just starting to soften, about 5 minutes.
- Pour the soy sauce mixture into the pan and stir until tofu and vegetables are thoroughly coated.
- Serve the tofu stir fry over cooked rice, sprinkled with sesame seeds.
