
Japanese Breakfast Pork Stir-Fry

Ingredients:
- 500 grams Lean pork loin
- 2 tablespoons Soy sauce
- 2 cloves Minced garlic
- 1 tablespoon Grated fresh ginger
- 2 cups Mixed vegetables (such as bell peppers, snow peas, and carrots)
- 2 tablespoons Canola oil
- 2 cups Cooked brown rice
Instructions:
- Cut the pork into thin strips. Mix soy sauce, minced garlic, and grated ginger in a bowl, add the pork strips and marinate from 10 minutes to overnight.
- In a large skillet or wok, heat the canola oil over medium heat. Add the marinated pork (without the marinade) and stir-fry until it's browned and slightly crispy, approximately 7-10 minutes.
- Add the mixed vegetables to the same skillet or wok and stir-fry until vegetables are tender-crisp, roughly 3-5 minutes.
- Finally, add the cooked brown rice and the rest of the marinade to the skillet. Stir everything together and cook for an additional 2-3 minutes until everything is heated through.
