
Japanese Breakfast Fish Rice Bowl

Ingredients:
- 200 grams Fresh white fish fillet (like cod or halibut)
- 1 cup Short grain rice
- 2 stalks Spring onions
- 1 tablespoon Soy sauce
- 1 tablespoon Mirin
- 1 teaspoon Ginger, grated
- 1 handful Nori seaweed strips
Instructions:
- Cook the short grain rice according to packet instructions.
- While the rice is cooking, cut the fish into bite-sized pieces.
- In a medium pan over medium heat, add the fish, soy sauce, mirin and ginger. Cook until the fish is fully cooked through, about 7-8 minutes, stirring occasionally.
- Slice the spring onions into thin slices.
- Divide the cooked rice between two bowls. Top with the cooked fish and drizzle over any remaining sauce from the pan.
- Garnish with the sliced spring onions and nori seaweed strips.
