
Japanese Beef Stir-Fry Breakfast Bowl

Ingredients:
- 1 pound Beef sirloin
- 0.25 cup Soy Sauce, low sodium
- 1 tbsp Fresh Ginger
- 2 pcs Garlic cloves
- 2 tbsp Vegetable oil
- 3 cups Mixed vegetables (Bell peppers, Carrots, Broccoli)
- 4 cups Cooked brown rice
- 0.5 cup Chopped scallions for topping
Instructions:
- Slice the beef sirloin into thin strips. Set aside.
- In a bowl, mix together the low-sodium soy sauce, fresh ginger, and minced garlic.
- Place the sliced beef into the marinade and let it sit for 10 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the mixed vegetables to the skillet and cook until they are crisp-tender, about 5 minutes.
- Remove the vegetables from the skillet and set aside.
- In the same skillet, add the marinated beef and cook for about 3-4 minutes, until the beef is cooked to your preferred doneness.
- Add the cooked vegetables back into the skillet and mix well with the beef.
- Serve the stir-fry over cooked brown rice and top with chopped scallions.
