
Japanese Beef and Egg Rice Bowl (Gyudon)

Ingredients:
- 1 pound Thinly sliced beef
- 1 whole Onion
- 4 cups Steamed rice
- 3 tablespoons Soy sauce
- 2 tablespoons Mirin
- 2 tablespoons Sugar
- 4 whole Eggs
- 2 whole Green onions
- to taste Pickled red ginger (Beni shoga)
Instructions:
- Thinly slice the onion and green onions. Set aside the green onions for garnish.
- In a large frying pan, add the beef and onions. Cook over medium heat until the beef is no longer pink.
- In a small bowl, combine soy sauce, mirin, and sugar. Pour this mixture over the beef and onion. Simmer for about 10 minutes.
- In the meantime, cook your rice according to the package instructions.
- Once the beef is done simmering, crack an egg over each portion. Cover the pan and let it cook for about 2 minutes, or until the egg is done to your liking.
- To serve, scoop a portion of rice into a bowl, then top with the beef and egg mixture. Garnish with green onions and pickled red ginger. Serve immediately.
