Japanese Beef and Egg Rice Bowl (Gyudon)

Ingredients:

  • 1 pound Thinly sliced beef
  • 1 whole Onion
  • 4 cups Steamed rice
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin
  • 2 tablespoons Sugar
  • 4 whole Eggs
  • 2 whole Green onions
  • to taste Pickled red ginger (Beni shoga)

Instructions:

  1. Thinly slice the onion and green onions. Set aside the green onions for garnish.
  2. In a large frying pan, add the beef and onions. Cook over medium heat until the beef is no longer pink.
  3. In a small bowl, combine soy sauce, mirin, and sugar. Pour this mixture over the beef and onion. Simmer for about 10 minutes.
  4. In the meantime, cook your rice according to the package instructions.
  5. Once the beef is done simmering, crack an egg over each portion. Cover the pan and let it cook for about 2 minutes, or until the egg is done to your liking.
  6. To serve, scoop a portion of rice into a bowl, then top with the beef and egg mixture. Garnish with green onions and pickled red ginger. Serve immediately.
