Jambalaya Breakfast Skillet

Ingredients:

  • 1 Cup Uncooked Brown Rice
  • 1/2 pound Sliced Smoked sausage
  • 1 Chopped Red bell pepper
  • 1 Chopped Onion
  • 4 Large Eggs
  • 2 Cups Fluid Chicken broth
  • 1 Teaspoon Salt
  • 1 Teaspoon Paprika
  • 1/4 Teaspoon Cayenne pepper
  • 2 Sliced Green Onions
  • 2 Cloves Garlic

Instructions:

  1. Task out a skillet with some oil over medium heat and add sausage, cooking until browned.
  2. Add into the skillet the onion, garlic, and bell peppers, cooking for around 5 minutes until softened.
  3. Stir in rice until well coated in the pan juices.
  4. Pour in chicken broth, then add salt, paprika, and cayenne, stirring until well combined.
  5. Reduce heat to a simmer, cover, and allow the rice to cook for around 20 minutes, or until the liquid has been absorbed and rice is tender.
  6. Using a spoon, make four wells in the rice and crack an egg into each. Cover the skillet and allow eggs to cook to desired doneness.
  7. Serve hot, garnished with the sliced green onions.
