
Jambalaya Breakfast Skillet

Ingredients:
- 1 Cup Uncooked Brown Rice
- 1/2 pound Sliced Smoked sausage
- 1 Chopped Red bell pepper
- 1 Chopped Onion
- 4 Large Eggs
- 2 Cups Fluid Chicken broth
- 1 Teaspoon Salt
- 1 Teaspoon Paprika
- 1/4 Teaspoon Cayenne pepper
- 2 Sliced Green Onions
- 2 Cloves Garlic
Instructions:
- Task out a skillet with some oil over medium heat and add sausage, cooking until browned.
- Add into the skillet the onion, garlic, and bell peppers, cooking for around 5 minutes until softened.
- Stir in rice until well coated in the pan juices.
- Pour in chicken broth, then add salt, paprika, and cayenne, stirring until well combined.
- Reduce heat to a simmer, cover, and allow the rice to cook for around 20 minutes, or until the liquid has been absorbed and rice is tender.
- Using a spoon, make four wells in the rice and crack an egg into each. Cover the skillet and allow eggs to cook to desired doneness.
- Serve hot, garnished with the sliced green onions.
