
Italian Vegetable Rice Breakfast Skillet

Ingredients:
- 2 tbsp Olive oil
- 2 cloves, minced Garlic
- 0.5 cup, diced Onions
- 1 cup, diced Bell peppers
- 1 cup, diced Zucchini
- 1 cup, cooked Brown rice
- 1 cup, chopped Tomatoes
- 1 tsp Italian seasoning
- to taste Salt
- to taste Black pepper
- 4 Eggs
- for garnishing Fresh basil leaves
Instructions:
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and onions to the skillet and sauté until the onions become translucent.
- Add the bell peppers and zucchini to the skillet and sauté until they are softened.
- Stir in the cooked brown rice and tomatoes. Sprinkle the Italian seasoning, salt, and black pepper over the mixture and mix well.
- Make four wells in the rice mixture. Crack an egg into each well.
- Cover the skillet and let it cook until the eggs are cooked to your liking.
- Garnish with fresh basil leaves before serving.
