Italian Vegetable Rice Breakfast Skillet

Ingredients:

  • 2 tbsp Olive oil
  • 2 cloves, minced Garlic
  • 0.5 cup, diced Onions
  • 1 cup, diced Bell peppers
  • 1 cup, diced Zucchini
  • 1 cup, cooked Brown rice
  • 1 cup, chopped Tomatoes
  • 1 tsp Italian seasoning
  • to taste Salt
  • to taste Black pepper
  • 4 Eggs
  • for garnishing Fresh basil leaves

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and onions to the skillet and sauté until the onions become translucent.
  3. Add the bell peppers and zucchini to the skillet and sauté until they are softened.
  4. Stir in the cooked brown rice and tomatoes. Sprinkle the Italian seasoning, salt, and black pepper over the mixture and mix well.
  5. Make four wells in the rice mixture. Crack an egg into each well.
  6. Cover the skillet and let it cook until the eggs are cooked to your liking.
  7. Garnish with fresh basil leaves before serving.
