
Italian Vegetable Frittata

Ingredients:
- 3 tablespoons olive oil
- 1 piece onion
- 2 pieces bell peppers
- 1 piece zucchini
- 2 pieces garlic cloves
- 2 pieces tomatoes
- 6 pieces large eggs
- 1/2 cup grated Parmesan cheese
- to taste salt
- to taste black pepper
Instructions:
- 1. Preheat your oven to 350°F (175°C).
- 2. While the oven is preheating, heat up the olive oil in a large oven-safe skillet over medium heat. Add the onion, peppers, and zucchini to the skillet and sauté for about 5-7 minutes, or until the veggies are tender.
- 3. Add the garlic to the skillet and cook for another minute. Stir in the tomatoes and cook for a couple more minutes, just until the tomatoes start to soften.
- 4. In a large bowl, whisk together the eggs, Parmesan cheese, salt, and black pepper. Once the veggies are ready, pour the egg mixture over them in the skillet, making sure the veggies are evenly distributed.
- 5. Move the skillet to the oven and bake for about 20-25 minutes, or until the frittata is set.
- 6. Remove the frittata from the oven and let it cool for a few minutes before slicing. Serve warm or at room temperature.
