Italian Sunrise Chicken

Ingredients:

  • 4 pieces Boneless chicken breasts
  • 2 Teaspoons Fresh rosemary
  • 3 Tablespoons Extra Virgin Olive Oil
  • 2 cloves Garlic cloves
  • 4 pieces Fresh Roma tomatoes
  • 1/2 cup Black olives
  • 1 Tablespoon Balsamic vinegar
  • To taste Salt and Pepper

Instructions:

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Place the chicken breasts in a baking dish. Drizzle 2 tablespoons of olive oil over the chicken breasts.
  3. Mince the garlic cloves and sprinkle over the chickens. Also, sprinkle fresh rosemary, salt, and pepper.
  4. Slice the Roma tomatoes, and arrange them over the chicken. Spread the black olives evenly.
  5. Drizzle the remaining olive oil and balsamic vinegar over the chicken and tomatoes.
  6. Bake in the preheated oven for about 45 minutes, or until chicken is cooked thoroughly and juices run clear.
  7. Serve the dish hot with a side of your choice.
