Ingredients:
- 4 pieces Boneless, skinless chicken breasts
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 1/2 cup Fresh basil
- 2 pieces Fresh tomatoes
- 1/2 cup Mozzarella cheese
- 4 pieces Eggs
- 1 tablespoon Low-sodium Italian seasoning
- 1/2 teaspoon Pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- While the oven is heating, chop the garlic finely and slice the tomatoes and basil.
- Warm the olive oil in a skillet over medium heat, add the chicken breasts and cook on each side for 5 minutes or until lightly browned.
- Sprinkle the cooked chicken with low-sodium Italian seasoning and pepper.
- Place the browned chicken at the bottom of a baking dish, then layer with tomatoes, crushed garlic, and fresh basil.
- Crack the eggs over the chicken and tomatoes, sprinkle with mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, until the eggs are cooked to your liking and the cheese is bubbly and lightly browned.
