Italian Summer Chicken Breakfast Bake

Ingredients:

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1/2 cup Fresh basil
  • 2 pieces Fresh tomatoes
  • 1/2 cup Mozzarella cheese
  • 4 pieces Eggs
  • 1 tablespoon Low-sodium Italian seasoning
  • 1/2 teaspoon Pepper

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. While the oven is heating, chop the garlic finely and slice the tomatoes and basil.
  3. Warm the olive oil in a skillet over medium heat, add the chicken breasts and cook on each side for 5 minutes or until lightly browned.
  4. Sprinkle the cooked chicken with low-sodium Italian seasoning and pepper.
  5. Place the browned chicken at the bottom of a baking dish, then layer with tomatoes, crushed garlic, and fresh basil.
  6. Crack the eggs over the chicken and tomatoes, sprinkle with mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, until the eggs are cooked to your liking and the cheese is bubbly and lightly browned.
