Italian Summer Breakfast Chicken Bake

Ingredients:

  • 4 Chicken breasts
  • 2 tablespoons Italian seasoning mix
  • 2 tablespoons Olive oil
  • 2 Fresh tomatoes
  • 1 cup Mozzarella cheese
  • 8 Basil leaves
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Drizzle the chicken breasts with the olive oil and evenly distribute the Italian seasoning mix on both sides. Season with salt and pepper.
  3. Place the chicken breasts in a baking dish and bake for 20 minutes in the preheated oven.
  4. While the chicken is baking, slice the tomatoes and mozzarella cheese.
  5. After the chicken has baked for 20 minutes, remove from the oven and layer the tomato slices and mozzarella cheese on top of each chicken breast.
  6. Place the chicken back into the oven and bake for an additional 10 to 15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  7. Remove from the oven and garnish each chicken breast with fresh basil leaves.
  8. Serve hot and enjoy this protein-rich Italian summer breakfast!
