
Italian Summer Breakfast Chicken Bake

Ingredients:
- 4 Chicken breasts
- 2 tablespoons Italian seasoning mix
- 2 tablespoons Olive oil
- 2 Fresh tomatoes
- 1 cup Mozzarella cheese
- 8 Basil leaves
- to taste Salt and pepper
Instructions:
- Preheat your oven to 400 degrees Fahrenheit.
- Drizzle the chicken breasts with the olive oil and evenly distribute the Italian seasoning mix on both sides. Season with salt and pepper.
- Place the chicken breasts in a baking dish and bake for 20 minutes in the preheated oven.
- While the chicken is baking, slice the tomatoes and mozzarella cheese.
- After the chicken has baked for 20 minutes, remove from the oven and layer the tomato slices and mozzarella cheese on top of each chicken breast.
- Place the chicken back into the oven and bake for an additional 10 to 15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Remove from the oven and garnish each chicken breast with fresh basil leaves.
