
Italian Summer Breakfast Chicken

Ingredients:
- 4 pieces Boneless, Skinless Chicken Breast
- 1 bunch Fresh Basil Leaves
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 2 cups Cherry Tomatoes
- 8 slices Mozzarella Cheese
- to taste Salt and Pepper
- 4 Eggs
Instructions:
- 1. Preheat your oven to 400 degrees.
- 2. Season the chicken breasts with the salt, pepper, and a tablespoon of oil on both sides.
- 3. Place the chicken in a baking dish and bake for 20 minutes.
- 4. Meanwhile, mince the garlic and slice the cherry tomatoes in half.
- 5. Heat the remaining tablespoon of oil in a pan over medium heat. Add the garlic and tomatoes, cooking until the tomatoes soften.
- 6. After the chicken is done, take it out of the oven and allow to slightly cool. Then, top each piece with the cooked tomatoes, two slices of mozzarella cheese, and fresh basil leaves.
- 7. Return the dish to the oven and bake for another 15 minutes or until the cheese has melted and is bubbling.
- 8. While the chicken is in the oven, fry the eggs in the same pan you cooked the tomatoes, seasoning with salt and pepper. Cook to your preferred level of doneness.
- 9. Serve each chicken piece with a fried egg on top, garnishing with the remaining basil leaves.
