
Italian Summer Baked Chicken

Ingredients:
- 4 pieces Boneless Chicken Breasts
- 2 tbsp Olive Oil
- 2 sprigs Fresh Rosemary
- 2 pcs Garlic Cloves
- 4 pieces Fresh Tomatoes
- to taste Salt
- to taste Ground Black Pepper
- 1 piece Lemon
Instructions:
- Preheat the oven to 200 degrees Celsius (or 392 degrees Fahrenheit).
- Rinse the chicken breasts and pat them dry with paper towels.
- Lightly coat the chicken with 1 tablespoon of olive oil, then season both sides with salt and black pepper.
- Place the chicken breasts in a baking dish.
- Slice the tomatoes and arrange them around the chicken in the dish.
- Mince the garlic and sprinkle over the chicken and tomatoes.
- Position the rosemary sprigs on top of the chicken.
- Drizzle the remaining olive oil over the chicken, tomatoes, and rosemary.
- Bake in the preheated oven for about 45 minutes, until the chicken is cooked through and no longer pink in the middle.
- Slice the lemon and squeeze some fresh lemon juice over the chicken before serving. This enhances the flavors and adds a tangy twist.
- Serve hot, garnished with additional fresh rosemary if desired.
