Italian Summer Baked Chicken

Ingredients:

  • 4 pieces Boneless Chicken Breasts
  • 2 tbsp Olive Oil
  • 2 sprigs Fresh Rosemary
  • 2 pcs Garlic Cloves
  • 4 pieces Fresh Tomatoes
  • to taste Salt
  • to taste Ground Black Pepper
  • 1 piece Lemon

Instructions:

  1. Preheat the oven to 200 degrees Celsius (or 392 degrees Fahrenheit).
  2. Rinse the chicken breasts and pat them dry with paper towels.
  3. Lightly coat the chicken with 1 tablespoon of olive oil, then season both sides with salt and black pepper.
  4. Place the chicken breasts in a baking dish.
  5. Slice the tomatoes and arrange them around the chicken in the dish.
  6. Mince the garlic and sprinkle over the chicken and tomatoes.
  7. Position the rosemary sprigs on top of the chicken.
  8. Drizzle the remaining olive oil over the chicken, tomatoes, and rosemary.
  9. Bake in the preheated oven for about 45 minutes, until the chicken is cooked through and no longer pink in the middle.
  10. Slice the lemon and squeeze some fresh lemon juice over the chicken before serving. This enhances the flavors and adds a tangy twist.
  11. Serve hot, garnished with additional fresh rosemary if desired.
