Italian-Styled Breakfast Fish Frittata

Ingredients:

  • 500 grams Fresh Cod Fillet
  • 6 pcs Large Eggs
  • 2 cups Fresh Spinach
  • 1 cup Cut tomatoes
  • 2 tablespoons Olive oil
  • 1/2 cup Grated Parmesan Cheese
  • to taste Salt and pepper

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Heat 1 tablespoon of olive oil in a large, oven-safe skillet over medium heat.
  3. Add the cod fillet and cook for 5-7 minutes until it's easily flaked with a fork. Remove from the skillet and set aside.
  4. In the same skillet, add the other tablespoon of oil and sauté the spinach until it wilts.
  5. In a mixing bowl, beat the eggs and then mix in the tomatoes and half of the Parmesan cheese. Season with salt and pepper.
  6. Pour the egg mixture into the skillet over the spinach, spreading evenly. Lay the cooked cod fillet on top of the egg mixture and sprinkle the rest of the Parmesan cheese over it.
  7. Put the skillet into the preheated oven and bake for 20 minutes or until the frittata is set and the cheese is golden brown. Let it cool slightly before serving.
