
Italian Style Vegetable Frittata

Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic
- 2 cups mixed vegetables
- 6 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup Parmesan cheese
Instructions:
- Heat the olive oil in a large, oven-proof sauté pan over medium heat. Add the garlic and mixed vegetables, then cook for 5 minutes until the vegetables are softened.
- In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the vegetables in the pan, then sprinkle the top evenly with the Parmesan cheese.
- Cover the pan and cook over medium heat for 10 minutes, or until the egg mixture has set around the edges but is slightly wobbly in the middle.
- Preheat the oven broiler. Place the pan under the broiler and cook for 3 to 5 minutes, until the top of the frittata is golden brown and the eggs are completely set.
- Remove the pan from the oven, let the frittata cool for a few minutes, then cut into wedges and serve.
