Italian Style Vegetable Frittata

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 cups mixed vegetables
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Parmesan cheese

Instructions:

  1. Heat the olive oil in a large, oven-proof sauté pan over medium heat. Add the garlic and mixed vegetables, then cook for 5 minutes until the vegetables are softened.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the vegetables in the pan, then sprinkle the top evenly with the Parmesan cheese.
  3. Cover the pan and cook over medium heat for 10 minutes, or until the egg mixture has set around the edges but is slightly wobbly in the middle.
  4. Preheat the oven broiler. Place the pan under the broiler and cook for 3 to 5 minutes, until the top of the frittata is golden brown and the eggs are completely set.
  5. Remove the pan from the oven, let the frittata cool for a few minutes, then cut into wedges and serve.
