Italian Style Quick and Easy Egg Pasta

Ingredients:

  • 400 grams Spaghetti
  • 4 large Eggs
  • 2 cloves Garlic
  • 100 grams Parmesan Cheese
  • 2 tablespoons Extra Virgin Olive Oil
  • to taste Salt and Pepper
  • 2 tablespoons Fresh Parsley

Instructions:

  1. Boil the spaghetti as per the package instructions until al dente.
  2. Meanwhile, beat the eggs in a bowl. Add the grated Parmesan, finely chopped garlic, salt, pepper, and mix well.
  3. Drain the pasta, but keep 1 cup of pasta water. Add the pasta back to the pan, lower the heat and add the egg mixture, stirring quickly so that the eggs do not scramble. If it's too dry, add a little pasta water.
  4. Remove from heat, add the olive oil and parsley, mix well.
  5. Serve immediately with some more Parmesan on top.
