Italian Style Healthy Grilled Pork Skewers

Ingredients:

  • 1 pound Pork loin
  • 2 whole Bell peppers
  • 1 whole Zucchini
  • 1.5 tablespoons Italian Seasoning
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Pepper
  • 8 pieces Wooden skewers

Instructions:

  1. 1. Preheat your grill to a medium heat.
  2. 2. Cut the pork loin into equal size cubes that will fit on your skewer.
  3. 3. Slice the bell peppers and zucchini into pieces that will fit on your skewer.
  4. 4. In a large bowl, toss pork, vegetables, olive oil, Italian seasoning, salt and pepper together.
  5. 5. Thread the pork and vegetables onto the skewers.
  6. 6. Grill skewers for about 15-20 minutes, turning occasionally, until vegetables are tender and pork is cooked throughout.
  7. 7. Remove from grill and let rest for 5 minutes before serving. Enjoy your healthy and delicious Italian style grilled pork skewers.
