
Italian Style Fish Crostini

Ingredients:
- 1 Loaf Sourdough Bread
- 2 tablespoons Olive Oil
- 2 cloves Garlic
- 2 fillets White Fish Fillets
- 1 cup Chopped Tomatoes
- 1 handful Fresh Basil
- to taste Salt & Black Pepper
Instructions:
- Preheat the oven to 180 C / 350 F and line a baking tray with parchment paper.
- Slice the sourdough bread into 2cm thick slices and drizzle both sides with the olive oil. Bake in the oven for 10-15 minutes, or until crispy and golden brown.
- While the bread is toasting, mince the garlic and season the fish with it, some salt, and pepper. Add the fish to a hot pan with a little more olive oil and cook for about 3-4 minutes on each side or until the fish flakes easily with a fork.
- Chop the tomatoes into small cubes and finely chop the fresh basil. Put them in a bowl, season with salt and pepper, and add a little olive oil.
- When the bread is ready, let it cool a little before topping with the cooked fish and tomato basil mix. Serve right away and enjoy this delicious Italian styled fish crostini!
