Italian Style Baked Eggs

Ingredients:

  • 4 units Eggs
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic
  • 2 units Fresh Tomatoes
  • 5 leaves Fresh Basil
  • 1/2 cup Parmesan Cheese
  • to taste Salt
  • to taste Black Pepper

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tomatoes and mince the garlic cloves.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  4. Add the sliced tomatoes to the skillet. Cook until the tomatoes are soft and starting to break down, about 5 minutes.
  5. Make four wells in the tomato mixture and crack an egg into each well. Sprinkle with salt and pepper to taste.
  6. Bake the skillet in the preheated oven until the eggs are cooked to your liking, about 7-10 minutes.
  7. Remove from the oven and sprinkle with grated Parmesan cheese and fresh basil leaves.
  8. Serve warm.
