
Italian Style Baked Eggs

Ingredients:
- 4 units Eggs
- 1 tablespoon Olive Oil
- 2 cloves Garlic
- 2 units Fresh Tomatoes
- 5 leaves Fresh Basil
- 1/2 cup Parmesan Cheese
- to taste Salt
- to taste Black Pepper
Instructions:
- Preheat the oven to 375°F (190°C).
- Slice the tomatoes and mince the garlic cloves.
- Heat olive oil in an oven-safe skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the sliced tomatoes to the skillet. Cook until the tomatoes are soft and starting to break down, about 5 minutes.
- Make four wells in the tomato mixture and crack an egg into each well. Sprinkle with salt and pepper to taste.
- Bake the skillet in the preheated oven until the eggs are cooked to your liking, about 7-10 minutes.
- Remove from the oven and sprinkle with grated Parmesan cheese and fresh basil leaves.
- Serve warm.
