
Italian Style Baked Cod

Ingredients:
- 4 pieces Cod fillets
- 2 tbsp Olive oil
- 2 pieces Garlic cloves
- 1 cup Pureed tomatoes
- 2 tsp Italian seasoning
- 1 cup Pitted olives
- 2 tbsp Capers
- to taste Salt
- to taste Pepper
- a handful Fresh basil leaves
Instructions:
- Preheat your oven to 400 degrees F (200 degrees C).
- Heat the olive oil over medium heat in a large oven-safe skillet. Add the garlic and cook until fragrant.
- Stir in the pureed tomatoes, Italian seasoning, olives, capers, salt, and pepper. Bring the sauce to a simmer.
- Add the cod fillets to the skillet. Spoon some of the sauce over the tops of the fillets.
- Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
- Garnish the baked cod with fresh basil leaves. Serve hot.
