Italian Style Baked Cod

Ingredients:

  • 4 pieces Cod fillets
  • 2 tbsp Olive oil
  • 2 pieces Garlic cloves
  • 1 cup Pureed tomatoes
  • 2 tsp Italian seasoning
  • 1 cup Pitted olives
  • 2 tbsp Capers
  • to taste Salt
  • to taste Pepper
  • a handful Fresh basil leaves

Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Heat the olive oil over medium heat in a large oven-safe skillet. Add the garlic and cook until fragrant.
  3. Stir in the pureed tomatoes, Italian seasoning, olives, capers, salt, and pepper. Bring the sauce to a simmer.
  4. Add the cod fillets to the skillet. Spoon some of the sauce over the tops of the fillets.
  5. Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
  6. Garnish the baked cod with fresh basil leaves. Serve hot.
