Ingredients:

  • 4 Skinless chicken breasts
  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 2 sprigs Fresh rosemary
  • 200 grams Cherry tomatoes
  • 2 Zucchini
  • 1 tablespoon Extra virgin olive oil
  • To taste Salt and freshly ground black pepper

Instructions:

  1. 1. Preheat the oven to 375°F (190°C).
  2. 2. Place the chicken breasts in a roasting dish and sprinkle with the lemon zest, lemon juice, crushed garlic, and rosemary leaves.
  3. 3. Add the cherry tomatoes and slices of zucchini around the chicken in the dish.
  4. 4. Drizzle the olive oil over the dish and season with salt and black pepper.
  5. 5. Bake for 45 minutes, or until the chicken is thoroughly cooked and the vegetables are tender.
  6. 6. Serve the baked chicken with a side of whole grain toast or a fresh green salad for a complete, healthier meal.
