Ingredients:
- 4 Skinless chicken breasts
- 1 tablespoon Lemon zest
- 2 tablespoons Lemon juice
- 2 cloves Garlic
- 2 sprigs Fresh rosemary
- 200 grams Cherry tomatoes
- 2 Zucchini
- 1 tablespoon Extra virgin olive oil
- To taste Salt and freshly ground black pepper
Instructions:
- 1. Preheat the oven to 375°F (190°C).
- 2. Place the chicken breasts in a roasting dish and sprinkle with the lemon zest, lemon juice, crushed garlic, and rosemary leaves.
- 3. Add the cherry tomatoes and slices of zucchini around the chicken in the dish.
- 4. Drizzle the olive oil over the dish and season with salt and black pepper.
- 5. Bake for 45 minutes, or until the chicken is thoroughly cooked and the vegetables are tender.
- 6. Serve the baked chicken with a side of whole grain toast or a fresh green salad for a complete, healthier meal.
