Italian Seafood Bruschetta

Ingredients:

  • 1 whole Baguette
  • 2 tablespoon Olive Oil
  • 2 whole Garlic Cloves
  • 1 cup Fresh Cherry Tomatoes
  • 2 cups Seafood Mix (prawns, squids, mussels)
  • 1/2 cup Fresh Basil Leaves
  • as per taste teaspoon Salt
  • as per taste teaspoon Black Pepper

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Slice the baguette into 1-inch slices and spread out on a baking sheet.
  3. Drizzle the slices with 1 tablespoon of olive oil and toast in the oven for 10-15 minutes or until golden brown.
  4. While the bread is toasting, heat the remaining olive oil over medium heat. Add the garlic and cook until fragrant.
  5. Add the cherry tomatoes and cook until they begin to break down.
  6. Add the seafood mix to the pan and cook until the seafood is opaque.
  7. Season with salt and pepper. Remove from heat and stir in the fresh basil.
  8. Rub the toasted bread with the remaining garlic clove. Top each slice with the seafood mixture.
  9. Serve immediately.
