
Italian Seafood Bruschetta

Ingredients:
- 1 whole Baguette
- 2 tablespoon Olive Oil
- 2 whole Garlic Cloves
- 1 cup Fresh Cherry Tomatoes
- 2 cups Seafood Mix (prawns, squids, mussels)
- 1/2 cup Fresh Basil Leaves
- as per taste teaspoon Salt
- as per taste teaspoon Black Pepper
Instructions:
- Preheat the oven to 400 degrees F.
- Slice the baguette into 1-inch slices and spread out on a baking sheet.
- Drizzle the slices with 1 tablespoon of olive oil and toast in the oven for 10-15 minutes or until golden brown.
- While the bread is toasting, heat the remaining olive oil over medium heat. Add the garlic and cook until fragrant.
- Add the cherry tomatoes and cook until they begin to break down.
- Add the seafood mix to the pan and cook until the seafood is opaque.
- Season with salt and pepper. Remove from heat and stir in the fresh basil.
- Rub the toasted bread with the remaining garlic clove. Top each slice with the seafood mixture.
- Serve immediately.
